DESSERTS!

What a great way to start those new years resolutions, right??  All three desserts were very yummy and super easy! We also want to thank Amanda for hosting at her beautiful home.  See you next month!


Raw Apple Cake

Mix in bowl:
4 C. Chopped Apples
2 C. Flour
2 C. Sugar
2 tsp. Baking Soda
2 tsp. Cinnamon
1 tsp. Salt

Mix in separate bowl:
2 Eggs
1/2 C. Oil
2 tsp. Vanilla
Mix with apple mixture

Looks gooey and thick.  Spread in 9x13 greased pan.  Bake at 350 for 45-60 min.

Note: This is a great recipe to use apples that are starting to get soft. 
Optional: Serve with vanilla ice cream and caramel too! Yummy!


Cream Cheese Dessert Pie

1 (7.5 oz) pkg Buttermilk Biscuits
1 (8 oz) pkg Cream Cheese, softened
1/2 c. Sugar
1 Egg
1 Tbsp. Flour

Topping: 1 Tbsp. Sugar
               1/2 tsp. Cinnamon

"Crust" Separate biscuits and place in 8 or 9 in. pie pan. Press into bottom and 1 inch up sides. Make sure that all edges are sealed together. Bake at 350 F for 5-7 min or slightly puffed. I sprinkled a little cin/sugar mixture on top after baking to tie in the flavors, but you could sprinkle it on before cooking too, or not at all!

"Filling" While the crust is cooking, beat cream cheese, egg, and flour. When crust is done, pour cream cheese mixture entirely over the crust. Sprinkle topping and swirl with knife. You can put as little or as much of the topping as you prefer) Bake 350 F for 15-20 minutes until filling is set when slightly shaken or bounces back when slightly pressed. Cool for 30 minutes on rack. (The pie will puff up when cooked, but flattens as it cools) Serve warm or chilled (refrigerate leftovers).


Texas Sheet Cake
1. Spray and flour pan.
2. Set oven for 350 F

Wet Ingredients
1 c. water
2 sticks butter (1 cup)
1/4 c. cocoa powder
1 tsp. vanilla
2 eggs
1/2 c. sour cream

Dry Ingredients
2 c. flour
2 c. sugar
1 tsp. baking soda

Frosting
1 stick butter (1/2 cup)
6 Tbsp milk
1/4 c. cocoa powder
1 box powdered sugar (about 3 3/4 cups or 1 lb)
1/2 c. nuts (optional)

3. Bring water and 2 sticks butter to boil in a small saucepan.
4. Remove from heat. Add 1/4 c. cocoa powder, vanilla, eggs, and sour cream.
5. Combine dry ingredients in a medium bowl.
6. Add wet ingredients to dry, mix together.
7. Pour batter into large cookie sheet.
8. Bake for 20 minutes.
9. In a small saucepan, melt 1 stick butter in milk, add 1/4 c. cocoa and mix well.
10. Beat (in saucepan or separate bowl) in powdered sugar. Add nuts if desired.
11. Spread frosting onto warm cake.
